This dish provides a hearty breakfast or lunch and a quick evening meal. Whenever you serve it, plantain deluxe will replace loneliness with happiness.
Plantains are related to bananas. Cooked plantain dishes appear frequently on menus in Central and South America and Southeast Asia. You will find this fruit in the produce department either unripe green, ripening yellow, or ripe black. For this dish, you will want the sweetness of black or yellow going to black.
INGREDIENTS (2 servings)
1 large or two small plantains
1 large onion
3 garlic cloves.
Olive oil for cooking
Your favorite salsa or hot sauce.
You will need a 10” skillet and a 12” skillet.
Peel and slice plantains into ¼” rounds
Coarsely chop onion
Finely chop garlic
In a 12" skillet, sauté the onion and garlic. Reduce heat when the onions begin to brown. Spread the plantain rounds evenly across a 10" skillet and cook on medium heat for 2 minutes or until the downside begins to brown. Be sure they are not on top of one another.
Flip the plantains, maintaining their spacing. Move the onions to one side and fry the eggs in the open area of the pan. Remove the plantains from the heat. Flip the eggs if necessary.
Serve immediately. Divide the onions between two plates. Top with plantains. Top with eggs. Top with salsa and/or hot sauce to your taste.
